Ingredients
  1. 14 oz sweetened shredded coconut
  2. 14 oz sweetened condensed milk
  3. 1 teaspoon pure vanilla extract
  4. 2 extra large egg whites, at room temperature
  5. 1/4 teaspoon kosher salt
  6. Espresso Ganache (yields a lot more ganache than you need)
  7. 3 cups semisweet chocolate chunks
  8. 2 cups heavy cream
  9. 1 teaspoon pure vanilla extract
  10. 1 tablespoon finely ground espresso beans
