Easy Pumpkin Cheesecake Muffins


Ingredients
MUFFINS:
  1. 1 15 oz can pumpkin
  2. 1/4 cup vegetable oil
  3. 2 large eggs
  4. 1 (200g) cup sugar
  5. 1 teaspoon vanilla
  6. 1 1/2 cups (188g) all-purpose flour
  7. 1 teaspoon baking powder
  8. 1/2 teaspoon baking soda
  9. 1/2 teaspoon ground cinnamon
  10. 1/2 teaspoon ground ginger
  11. 1/2 teaspoon ground nutmeg
  12. 1/8 teaspoon ground cloves
  13. 1/2 teaspoon salt
  14. 1/4 teaspoon freshly ground black pepper
FILLING:
  1. 8 ounces (200g) cream cheese, at room temperature
  2. 1 large egg yolk
  3. 5 tablespoons (75g) sugar
  4. 1/8 teaspoon vanilla extract
  5. Chopped nuts (walnuts, pecans) (optional)
